Bearded Iris {Flowers}

On my way back home from a photo session I stopped at the store to pick something up. I saw these Bearded Iris' at the building next door. So, I just had to take a photo of them. Although yet again I have blown whites I still like the photo. I want to learn more about photoshop (I have CS4) and lightroom (version 2). How would you go about getting the whites so they are not blown? Yes I did shoot RAW. I could have just changed the angle but I was in a hurry to get home & upload the photos from my session.
